Corzetti, also known as Croxetti, are a specialty from Liguria that was already widespread in the Middle Ages. Later, the Ligurians were so proud of their Corzetti that noble families even had Corzetti stamps made with their own family coat of arms. Those who were not so well-heeled also used a Corzetti stamp, but without a noble pattern.
The more robust the material from which the embossing stamp is made, the better the pastamedailles succeed. With this brass stamp you play in the Ferrari League.
How it works:
You take a sheet of dough and cut out a round shape.
On it you stamp from above. The result is a coin-shaped pasta.
Due to the pattern in the stamp, the sauce can be absorbed particularly well.
